The future of this well-known Edwardian manor house seemed in doubt when it went onto the market in mid-2023, but instead longtime guardians Max & Susan Fischer (latterly handing the reins to son Neil) have leased two of their pubs – the Prince of Wales in Baslow, and Bulls Head at Foolow – to Nick & Jemma Beagrie of the Bakewell bakery, and refocused their interest on Fischer’s, so far kept afloat thanks to lucrative new deals with the likes of luxury giants LVMH, who will oversee a new summer champagne bar (part of their wider expansion plans). Given such exciting events, there was the odd blip this year, but the general tenor of reports was still upbeat (“never had a bad meal here”; “best meal of the year”).

This well-known Peak District property has been run by Max & Susan Fischer since 1988 and is currently managed by their son Neil, who is credited in reports with keeping standards at least as high under his parents. Watch this space as there are plans to open a champagne bar on the terrace this summer.

“Fischers is almost a by-word for elegant country-house dining in the Peak District”“the food is creative and tasty”, and “a really attentive team looks after you”. “The setting is hugely impressive”, too: “a grand house that still feels warm and friendly”, a short drive from the even more impressive Chatsworth. Top Menu Tip – “they have a fantastic pastry chef” – so leave room for pudding.

Close to Chatsworth House, this well-located country house hotel in the Peak District is currently riding high on the back of winning 4 AA red stars for the quality of its accommodation. On the food front, chef Nathan Wall presides over the delivery of a four-course menu plus a more extensive tasting option, in a dining room overlooking very attractive gardens. Even the least enthusiastic report said the cuisine is “very good” here and staff “attentive”.

The chef

We were delighted to welcome John into our family as Sous Chef in the summer of 2022. His journey with us took a significant step forward when he embraced the role of Head Chef in the summer of 2024.

John’s love for cooking was ignited at the tender age of 12 while he joyfully prepared meals alongside his grandmother in their cosy kitchen. Those early experiences laid the foundation for his culinary passion and creativity.

Over the past few years, John has treasured his time at esteemed establishments such as Mallory Court, Glenapp Castle, and Rust en Vrede in South Africa. Working alongside exceptional chefs in these remarkable kitchens allowed him to hone his skills and gain invaluable insights into the art of fine dining. Deeply committed to the philosophy of using quality ingredients, John thrives on sourcing produce that is not only fresh but also as local as possible. He takes immense pride in utilising ingredients from our own kitchen garden, which brings a unique and personal touch to his dishes. While he doesn’t claim a specific “signature dish,” he relishes the opportunity to create exquisite fish dishes that showcase his culinary talent.

Private dining

Our private dining rooms offer the perfect backdrop for a celebratory meal, family get-together or business meeting. The Main Dining Room seats up to 35 guests, the Drawing Room up to 22 and The Wine Room seats up to 8.

"lovely romantic setting with beautiful well tended gardens.. unfortunately the food didn't live up to the location.. greater finesse and attention to detail required from the kitchen.. Nice selection of Coravin wines lifted the experience, but couldn't save the day."
