“Showcasing the wonderful Hebridean produce of the Isle of Skye with a superb taster menu” – chef-patron Calum Montgomery converted this 16th-century hunting lodge in 2018 into “the most wonderful restaurant with rooms” and it is nowadays second-to-none on the island in terms of the feedback we receive. “That they source all of their ingredients from the region is pleasing to see, and you can tell how much passion goes into the preparation”: “The fish and seafood is so fresh and so delicious… it could be caught that morning and on your plate that evening: epic”. One puzzle – “it deserves a star!” from the tyre men.

“The tasting menu is a real journey around Skye, sampling the best of local produce” at Calum Montgomery’s converted hunting lodge (built in 1543, revamped in 2018) – the ten-course meal is £125 per person. The result is “some of the most exciting cooking you will find, with THE freshest and most local Scottish produce”. But while all reports here say results are “unbeatable”, they still haven’t been blessed with a star by the tyre manufacturers based in Clermont-Ferrand… just a matter of time surely?

“Really outstanding… and so surprising to find in such a location” – Calum Montgomery’s converted hunting lodge (built in 1543 and extensively refurbed in 2018) is “so much better than so many acclaimed restaurants” (and invites comparisons with the much more established nearby Three Chimneys, which it narrowly edges with its food rating). The focus is on his ‘Taste of Skye’ ten-course tasting menu showcasing local produce and delivered by “friendly and attentive” staff. Ratings this year and last suggest it’s “worthy of a Michelin star” but no sign yet: “maybe they’re too modest”. Perhaps the Tyre Men will finally catch on in their 2023 awards as in late 2022 the AA promoted him from 3 to 4 rosettes.

A Skye native, chef Calum Montgomery is making his mark at this converted hunting lodge (dating from 1543) which he has run with his wife as a restaurant with four luxury rooms since 2017. To say that reports are a hymn of praise would understate matters. But, although he has won recognition to date (3 AA rosettes for instance), he has yet fully to garner all the accolades he deserves, and reporters are unanimous that this is now “clearly one of the top destination restaurants on Skye”. “The food is locally sourced and prepared with such imagination and dedication by a hard-working team; the front-of-house staff are friendly and welcoming, and there’s a very good, affordable wine list”. “Although a tasting menu can seem tiresome, Edinbane produces an imaginative and light take on the freshest of local ingredients”“a really exceptional spread that puts to shame so many well-regarded restaurants further south. The use of local foods and suppliers is completely convincing. It’s exceptional value for money, and not pretending to be something it isn’t or can’t be. Really wonderful” and on numerous assessments “a Michelin star in the making”.

"Our dining experience at this restaurant on the Isle of Skye was truly unforgettable, not only because of the exquisite food but also due to the exceptional service that made the entire evening feel extraordinary. From the moment we arrived in Edinbane, we knew we were in for something special. We faced a slight issue with checking into our Airbnb, which was conveniently located just across the street from the restaurant. The staff, incredibly kind and accommodating, went out of their way to contact the Airbnb owner and help us settle in. This was just a glimpse of the exceptional service we would experience throughout our visit. Later that evening, when we returned for dinner, the warmth and hospitality of the staff continued. The service was stylish, friendly, and incredibly attentive, far exceeding what one would typically expect even from a Michelin-starred establishment. The staff took the time to explain each dish in detail, which added a personal touch to our experience. Chef Calum, who stopped by our table to say hello, was the highlight of the evening. His talent was evident in every dish, and it was clear that he has an incredible future ahead of him in the culinary world. We had the “A Taste of Skye” menu, a thoughtfully curated selection that truly showcased the creativity and quality of ingredients available on the Isle of Skye. Every dish was a masterpiece, beautifully presented and bursting with flavor. The four starters, cured turbot, free-range chicken, wagyu tartare, and barbecued mussels—were small but packed with such intense flavor combinations that we were still reminiscing about them long after our meal. Each bite was a revelation, and while the portions were small, the quality and creativity more than made up for it. The main course, which included a giant scallop with smoked dulse, was a highlight for my husband, although I found the smokiness of the sauce slightly overpowering for my taste. The scallop itself was one of the largest I have ever seen, and my husband was delighted to finish both his and mine! The attention to detail in the flavor profiles was remarkable, and it was clear that the chef had put a great deal of thought into each dish. The wine pairing that accompanied our meal was equally impressive, carefully selected to complement each course. The bartender, a fun and skilled character, also crafted some outstanding cocktails that added to the enjoyment of the evening. The atmosphere was cozy and inviting, and the historic building created the perfect backdrop for an unforgettable meal. While this restaurant is undoubtedly a splurge, we felt the experience was worth every penny. From the perfectly executed dishes to the exceptional service, it’s easy to see why this restaurant stands out as one of the best in Scotland."
