“The tasting menu is a real journey around Skye, sampling the best of local produce” at Calum Montgomery’s converted hunting lodge (built in 1543, revamped in 2018) – the ten-course meal is £125 per person. The result is “some of the most exciting cooking you will find, with THE freshest and most local Scottish produce”. But while all reports here say results are “unbeatable”, they still haven’t been blessed with a star by the tyre manufacturers based in Clermont-Ferrand… just a matter of time surely?

Ratings this year and last suggest it’s “worthy of a Michelin star” but no sign yet: “maybe they’re too modest”. Perhaps the Tyre Men will finally catch on in their 2023 awards as in late 2022 the AA promoted him from 3 to 4 rosettes.

To say that reports are a hymn of praise would understate matters. But, although he has won recognition to date (3 AA rosettes for instance), he has yet fully to garner all the accolades he deserves, and reporters are unanimous that this is now “clearly one of the top destination restaurants on Skye”. “The food is locally sourced and prepared with such imagination and dedication by a hard-working team; the front-of-house staff are friendly and welcoming, and there’s a very good, affordable wine list”. “Although a tasting menu can seem tiresome, Edinbane produces an imaginative and light take on the freshest of local ingredients” – “a really exceptional spread that puts to shame so many well-regarded restaurants further south. The use of local foods and suppliers is completely convincing. It’s exceptional value for money, and not pretending to be something it isn’t or can’t be. Really wonderful” and on numerous assessments “a Michelin star in the making”.
