Chef Scarlett.T, the visionary behind Dumpling Queen x Dai Jou Bu, has brought a rich, multicultural culinary journey to Edinburgh. Originally from Hong Kong, Scarlett launched her first restaurant there in 2018, specializing in handmade dumplings and noodles crafted with passion and authenticity. Her dedication to traditional techniques combined with a flair for innovation led to an impressive following, with customers drawn to her unique dishes.
In 2019, Scarlett moved to Edinburgh, embracing Scotland’s rich culinary culture. Her new restaurant, Dumpling Queen x Dai Jou Bu, opened in 2024 in the heart of the Old Town and quickly gained a reputation for bold fusion dishes. Scarlett’s creations blend the flavors of Chinese, Japanese, and Scottish cuisine, reflecting her love for experimentation. The menu features her signature Tan Tan Noodles and spicy dumplings with a specially crafted house sauce. One standout creation is her haggis dumpling—a pioneering East-meets-West dish and one of Scotland’s first haggis dumplings.
