Training the chefs and servers of the future: OKN1 (the OK stands for Open Kitchen) is a collaborative kitchen and training restaurant attached to New City College, for trainee chefs to gain work experience alongside professional chefs, who are Steve Tonkin and Radoslaw Nitkowski (both ex-Dean Street Townhouse) and Siphiwe Sipijo (ex-Holborn Dining Room). The cuisine is 'New European'.
