Chef Mark McCabe (left in picture), formerly of the Ethicurean restaurant near Bristol, is taking over the kitchen at Simon Rogan’s Henrock, overlooking Windermere in the Lake District.
The Ethicurean, where Scottish-born Mark was part-owner, closed down in October last year, while Henrock, in Linthwaite House Hotel, is part of Simon’s Umbell group whose flagship L’Enclume is currently rated the UK’s No 1 restaurant in the Harden’s guide.
Mark should be a good fit: as the name suggests, the Ethicurean promoted an ultra-sustainable and environmentally conscious approach to food, very much in line with the philosophy at Umbell, which produces much of its own produce on the company farm in Cartmel.
Mark said: ”As a chef I have always been compelled and inspired by nature, seasonality, and sustainability and so the Simon Rogan way of sourcing and cooking aligns so closely with my own personal ethos, it feels like the perfect continuation of the work I have dedicated my career to so far.“
Simon added: ‘‘Mark is not only a highly skilled chef but following his experience in kitchens which also harness such a strong connection to where its food is grown, means he has developed a true understanding of growing and an appreciation for nature and sustainability that is rare to find.“
Meanwhile Cillian Hennessy, the previous head chef at Henrock, is moving to become head chef at Aulis, L’Enclume’s development kitchen.
