Chef Anna Søgaard, who came to prominence at Manchester’s ultra-minimalist restaurant Erst, is to head the kitchen brigade at a new Shoreditch venture from the team behind Crispin in Spitalfields and bar Crispin in Soho.
Bistro Freddie, which is due to open this summer, has taken over the Luke Street premises formerly occupied by Oklava, which closed down after seven years in January despite winning acclaim for owner Selin Kiazin’s Turkish-Cypriot cooking – hailed as “fabulous” in the current Harden’s Guide.
Anna, pictured above right with Bistro Freddie colleagues, grew up between Copenhagen and Florida, and will focus on British ingredients from independent producers and growers. Meanwhile Alex Price (pictured above left), sommelier for the Crispin group, is working on an all-French wine list; her list at Crispin leans heavily towards organic and biodynamic wines.
