Coworth Park, the luxury hotel near Sunningdale in Berkshire, will unveil a new destination restaurant named after its executive chef next week. Woven by Adam Smith promises to “push the boundaries of creativity and excellence” when it launches on Thursday 8 September.
Once owned by the polo-playing Canadian billionaire Galen Weston, the palatial Georgian house is set in a 240-acre estate was and was launched as a spa hotel by the Sultan of Brunei’s Dorchester Collection in 2010.
Adam Smith, a former Roux scholar who trained at The Ritz, joined as executive chef in 2016 and has masterminded the development of the new 44-cover restaurant, which seats a further 14 in a conservatory with views over the estate.
He said: “A memorable dining experience is created by so much more than the dishes that we eat. With Woven, we will be pushing the boundaries of creativity and excellence in food, but also in drinks, service and design to create a restaurant that delights both destination diners and hotel guests alike.
“Stories and knowledge from my entire career, alongside inspiration from the idyllic landscape, will be woven into the menus, and the dishes, whilst refined, will be presented in playful and contemporary ways. Woven has been many years in the making, and we cannot wait to welcome our first guests.”
