A chef and a sommelier with impressive pedigrees have teamed up to open an ambitious ‘chef’s table’ restaurant in Edinburgh this spring. Eòrna – barley in Gaelic – will have no staff, with the founding pair providing a “pared-back, intimate, yet sophisticated dining experience”.
Chef Brian Grigor (left in photo) ran the kitchen of Number One at the city’s Balmoral hotel for four years, while sommelier Glen Montgomery’s CV includes a stint at Restaurant Andrew Fairlie in Auchterarder – Britain’s best restaurant, according to this year’s Harden’s guide.
The pair gave their project a trial run with a pop-up last summer, and announced their bricks-and-mortar site last week: “We have found our home. We got the keys to our permanent location! It’s in Stockbridge, but we have some work ahead of us to build it. We’re really excited about what we’re going to offer.“
They also released a teaser menu consisting of: Mull cheddar mousse, quince and hazelnut – Belhaven smoked salmon, lemon puree, quail’s egg and caviar – Hand-dived Orkney scallop, oyster leaf, burnt apple – Loin of roe deer, salt-baked celeriac, sauce grand veneur – Rhubarb and custard – Valrhona dark chocolate tart, milk chocolate cremeaux, toasted barley ice-cream.
