Duende, the hotly-anticipated modern Spanish restaurant from chef-patron Victor Garvey (co-founder of Bravas in St Katherine Docks), opens today (4 March) in Covent Garden’s Maiden Lane.
Translating as ‘imp’ or ‘sprite’, but also ‘mischief’ and ‘charm’, Duende will serve Spanish food, influenced by Garvey’s travels and experience working in restaurants around the world.
From the open kitchen, diners can watch the chefs prepare dishes like: Cured salmon rulada, crispy sweet potato, red onion escabeche and wasabi alioli; Pancetta-wrapped quail with Pedro Ximenez jus; and Oyster fritura, toasted almonds and Riofrio caviar.
The menu will be complemented by an all-Spanish wine list, available by the glass and bottle, as well as a cocktail list featuring many variations of Spain’s national drink – gin & tonic. Duende will initially open for dinner only, Monday-Saturday, lunch and Sunday services will be added in mind-March.
