A trio of friends with impressive track records have opened a new wine bar and restaurant called Wilson’s in Ladywell High Street, southeast London.
Wilson’s is next door to crowd-funded sustainable food store Plenty and opposite coffee shop Oscar’s, which are both owned by husband and wife Alina and Joel Falconer. Joel is a former managing director of the Busaba and Ibérica groups, while Alina has worked at Roka, Zuma, Flesh & Buns and Shackfuyu.
Co-founder Henry Freestone is a former head chef at Peckham Cellars who was in the opening teams at Bambi in London Fields and Crispin in Spitalfields.
His short weekly changing menu at Wilson’s comprises five small plates, two main courses and two desserts, with choices such as Celeriac remoulade with toast; Goat’s cheese profiteroles with beetroot and walnuts; Beef shin nuggets with horseradish sour cream; Toulouse sausages with braised Puy lentils and Crème anglaise with poached rhubarb and crumble.
The drinks list runs to three pages, with a short selection of beers, cocktails and non-alcoholic options alongside a wider range of wines.
