Simon Rogan officially launched his new chef’s table experience Aulis at Fera at Claridge’s, in Mayfair, today (7 January). The space is located adjacent to the main kitchen at Fera, and functions not only as a development kitchen for chefs, but also as an exclusive, intimate and interactive private dining room for diners.
The six-seat kitchen counter offers guests the opportunity to book individual spaces or the table in its entirety to get ‘up close and personal’ with the chefs as they prepare and serve the multi-course dinner menus.
The space is named Aulis as a tribute from Simon Rogan to Aulis Lehtimaki, a Finnish chef and artist who was a key collaborator in the early days of L’Enclume, Rogan’s “exciting and unique” Cartmel restaurant, where food is often “worthy of a Turner Prize” according to our reporters. L’Enclume has had its own Aulis development kitchen since 2012.
The menu will make use of seasonal produce from key British suppliers, and, of course, from Rogan’s own farm near Cartmel.
Head of Aulis at Fera, Alex Beard, previously at The Waterside Inn, will be responsible for the day-to-day operation, with the general menu development overseen by Simon Rogan and Fera’s exec chef Dan Cox.
As one might expect a seat at Aulis won’t be cheap. The menu is £150 per person, with an optional wine pairing at £130 per person. It is open for dinner only at 7 pm from Thursday-Saturday. Reservations must be made online on www.aulis.feraatclaridges.co.uk and will be taken up to four weeks in advance.
