
Shaun Moffat is to open his debut restaurant as chef patron in Manchester city centre this spring, combining ‘thoughtful British cooking’ and ‘Northern hospitality’ at Winsome, in the glass atrium of the Whitworth Locke Hotel on Princess Street.
Shaun (pictured centre) made his name locally at the Edinburgh Castle in Ascots – highly praised for its “superb” cooking in the most recent Harden’s survey – and most recently at Maya after working in top London kitchens including Manteca, Hix and St Leonard’s.
He says: “Opening the doors will be a big moment in my career, I am truly excited to share Winsome with the people of Manchester.”
Shaun is joined at Winsome by northwest hospitality pros Owain Williams (right in photo), founder of Belzan, Madre and Medlock Canteen, and drinks supremo Tom Fastiggi (left), formerly of Schofields bar, who will be creating some new cocktails for the opening.
Tom says: “The atrium space truly gives a unique feel to this bar. The drinks will be familiar and a warm welcome will await all guests. It’s a great new addition to Manchester’s hospitality scene.”
