Wahaca, Pho and Vapiano have all snapped up sites in Manchester’s Corn Exchange, which will reopen following a £30m refurb in June next year. Thomasina Miers’s chain of vibrant Mexican operations (pictured) has been confirmed as one of the development’s flagship tenants alongside restaurants opening their first Mancunian outposts.
Continental-style food court Vapiano, which already has two London locations serving up pizza, pasta and salad, will take up residence in the Corn Exchange, as will unstoppable Vietnamese noodle purveyors, Pho.
This will be Pho’s first Manchester site, and one of many new restaurants they plan to open (25 in total over the next three years).
What with Hawksmoor and Ibérica making their move north next year to the city’s Spinningfields development, it seems as though Manchester’s dining scene is further upping its game.
