Prolific young Edinburgh chef Tomás Gormley will next week unveil his ambitious restaurant Cardinal, an “intimate” spot on the edge of the city’s New Town serving a 13-course tasting menu.
It is the third new restaurant from Tomás in four years, following Heron in Leith and Skua in Stockbridge. But these two were in partnership with fellow chef Sam Yorke, while Cardinal – in Eyre Place, Canonmills – is his first solo venture.
He says: “Cardinal gives me and the team an opportunity to showcase something we don’t think anyone in Scotland offers people yet. It’ll be fine dining for sure, but we want things to feel exciting and fun at the same time. Expect a lot of the same energy you experience at Skua, just in a longer, more detailed tasting menu format.”
With just 24 diners at each service, Cardinal offers a set menu of 13 courses at £130 for dinner and a shorter menu for lunch. Signature dishes include cherry-smoked lobster, a riff on the ‘home-smoked lobster’ served at Restaurant Andrew Fairlie in Gleneagles, where Tomás worked early in his career.
Cardinal opens next Wednesday, 13 March, and the full tasting experience is available for £95 for the rest of March to subscribers who sign up on the restaurant website.
Ornithological note: the heron, skua and cardinal are all avian species – the latter a crested red bird native to North America.
