Los Angeles celeb chef Kris Yenbamroong has found a permanent showcase for his US-style ‘nu Thai’ cuisine at the new Hoxton Hotel overlooking Shepherd’s Bush green, launching on Monday 12 December.
Chet’s, which aims to combine the excitement of Thai flavours with the comfort of an American diner, had a test run as a pop-up earlier this year at the Holborn branch of the Hoxton’s ‘incubator’ basement, Rondo la Cave.
Founder Kris, a New York University film school graduate whose family ran a Thai restaurant in Los Angeles, attracted a high profile with the launch of Night + Market in West Hollywood in 2010. He now has two more branches in LA and another in Las Vegas.
The Chet’s pop-up menu included toasted milk bread with prik tum garlic spread; a pork and beef ‘smashburger’ with American cheese and a secret house sauce; iceberg lettuce with candied pork jowl and blue cheese dressing; and a som tum sundae.
The website promises American-style filter coffee, milk shakes and beer to wash the food down, while both the Night + Market and the Chet’s pop-up have been strong on low-intervention wines from Europe.
