Food waste focus at Bristol Yurt Bistro

Chef Josh Eggleton has launched a “Yurt Bistro” menu to highlight food waste in the restaurant industry at his Eat Drink Bristol Fashion project next to the city’s main station, Temple Meads.

Eggleton is best known for his outstanding gastropub the Pony and Trap at Chew Magna, just south of Bristol, and also took over the Kensington Arms in Redland late last year.

He co-founded Eat Drink Bristol Fashion in a group of Mongolian yurts to offer ethically sourced and sustainable food close to the city centre.

The bistro menu served in the evenings at Yurt Lush focuses on out-of-vogue ingredients and cuts of meat that are often consigned to the butcher’s bone bin, such as beef shin (pictured).

“You can do so much with what usually gets thrown away,” says Eggleton. “With proper care and attention, cheap cuts taste just as great as the more expensive ones.”
