Southern US fried chicken gets a Tokyo makeover at a new street-food stall that has opened in Vinegar Yard near London Bridge. Lani Lam’s Japanese Chicken Shop combines Nashville-style hot chicken with Japanese ingredients, in a sandwich of classic soft milk bread.
Sandos on offer include the Tokyo Hot Chicken (pineapple jam, Kewpie mayo, dark soy caramel, charred cabbage), Tonkatsu BBQ (tonkatsu BBQ, cabbage, pickles) and Yuzu Burst (sriracha, yuzu mayo, apple slaw). They are served on artisanal shokupan – milk bread sourced from London-based Japanese bakers, Happy Sky Bakery – and come with togarashi fries, slaw and signature Japanese Chicken Shop sauce.
The sandos and meal boxes can be eaten on Vinegar Yard’s terrace and are available to take away from a hatch on St Thomas Street. Cauliflower or vegan chick’n versions are also available.
