Filipino chef Ferdinand ‘Budgie’ Montoya opens his latest venture tomorrow (Saturday 13 May) – Apoy, a street-food barbecue stall in the Oxford Street Market Halls.
Budgie has raised the profile of Filipino cuisine in London in recent years through his bistro Sarap, which operated in Mayfair’s restaurant incubator Heddon Street last year, and TV appearances on Great British Menu.
Apoy – meaning fire in Tagalog – is a more informal project based on the barbecue or “inihaw” cooking found in the Philippines, with skewers of chicken and pork marinated in a sweet and salty mix including vinegar, soy, the citrus fruit calamansi and even 7 Up, then cooked over charcoal and served over rice with pickles on the side.
There will also be typical Filipino snacks, including fried chicken skins.
