Chef George Barson has joined Higher Farm regenerative project near Castle Cary in Somerset, where he is developing a new restaurant that is set to open next year.
West Country-bred George made his name at Kitty Fisher’s in Mayfair’s Shepherd Market before heading back west to Bath three years ago to head the kitchen at the new Beckford Canteen, where he again impressed critics before leaving earlier this year.
Higher Farm was founded by brothers Giacomo and Matteo Grasso and colleague Basil Gibson to combine rewilding with regenerative agriculture on its 55 acres, growing chemical-free food while boosting biodiversity.
It currently sells vegetable boxes and has a Farm Caff offering cooked breakfast and lunch from 8am–3pm. George will introduce weekly suppers in the New Year, with a full-scale restaurant expected to follow later in the year.
