Two former managers at chef Brett Graham’s Fulham gastropub the Harwood Arms have teamed up to open a food-led country pub near Henley.
The thatched, Grade II-listed Bottle & Glass Inn, in the south Oxfordshire village of Binfield Heath, will open its doors by the end of March following an 18-month renovation.
Owners David Holliday and Alex Sergeant met in 2008 while working at the Harwood Arms, where Sergeant took over from Holliday as general manager.
Holliday, who grew up on a farm in Hampshire, is a former head chef at the nearby Pot Kiln in Berkshire. A game specialist, he will ensure the Bottle & Glass serves local wood pigeon and fallow deer, along with cheeses from the Nettlebed Creamery.
Sergeant will oversee the drinks at the free house, with local beers from the Loddon brewery as well as wine and champagne. There will also be a separate traditional bar so drinkers feel they are in a pub and not a restaurant.
