The Hoxton Hotel and Brooklyn oyster and cocktail joint Maison Premiere are to launch Seabird in Southwark this September.
The partnership sees one of the world’s best bars – number 91 on the World’s 50 Best Bars list, among other accolades – join forces with one of London’s trendiest hotel groups.
While cocktails and oysters will perhaps be Seabird’s flagstones, seafood generally will be given centre stage.
“At Seabird, seafood takes centre stage, quite literally, with an impressive raw bar piled high to steal the show,” said an announcement.
“Oyster lovers can work their way through London’s largest election while an extensive crudo menu will offer diners something different every time.
“The menu draws inspiration from the Mediterranean, honing in on Portuguese and Spanish flavours, embracing a sea-to-table ethos.
“Highlights include Cornish plaice a la plancha with Morecombe Bay shrimps and capers, sardines on toast with harissa, rocket and lemon, and Basque-style bouillabaisse ideal for sharing.
“A standout plateau de fruits de mer verges on the OTT side of extravagant with tier upon tier of the finest shellfish.”
Nothing has yet been revealed as to the cocktail list, but, given the locale and the intent clearly displayed, we imagine it will be a strong one.
