A Spanish-inspired neighbourhood restaurant called Amari opens next week in Brighton, from the team behind Mexican spot Halisco.
Chef Ian Swainson, previously of Amarillo in the city, will head the kitchen, with his partner Justyna Maria Ciurus, formerly of the Little Fish Market in Hove, running the front of house. They are backed by brothers Ali and Mo Razavi, having developed the concept when Ian joined Halisco as head chef last year.
“We would chat more or less every service about how we think Brighton is missing some great Spanish food,” said Ali. Amari will serve “contemporary and original takes” on Hispanic classics. “We will not be a fine-dining restaurant, but more fun dining, with affordable prices and a warm welcome.”
Amari opens on Wednesday 23 October in Baker Street, in the former premises of vegan pasta restaurant Pastan, which closed in the summer.
