Matt Appleton and Jess Blackstone, the pair behind Highbury-based Fink’s Salt & Sweet cafés, are launching a new restaurant in the area next week.
Saltine will offer coffee, pastries and grab-and-go bites during the day, but operate as a full-scale restaurant in the evening, with a menu from former St John Marylebone chef Phil Wood backed up by a list of cocktails and low-intervention wines.
The original Fink’s opened nine years ago, and is now the flagship of a quartet of deli/cafés.
Saltine opens next Wednesday 25 October at 11 Highbury Park, N5. There will be a soft opening until Saturday 28 October, with food bills at 50%.
