Fulham Football Club has announced its two latest signings for next season – chefs Alex Dilling (left) of the Café Royal and Oli Marlow (right) of Roganic in Hong Kong and Aulis in Phuket – who will be overseeing match-day meals in the Gourmet restaurant of the club’s imposing new Riverside stand.
Adam Byatt of Trinity in Clapham has already been revealed as the chef behind the Riverside’s permanent restaurant, Brasserie Constance, which is scheduled to open this spring. Named after Constance Spry, the inventor of Coronation chicken who also designed for the local Fulham Pottery, it is billed as a ‘modern British brasserie’.
Constance will have its own bar called Flo (after Spry’s assistant Florence Standfast) and will feature floor-to-ceiling windows with views over the Thames. There will also be a terrace as well as a private dining room with its own private terrace.
At ground floor level there will be a Riverside Market accessible from the public riverside walk, with units already taken by singer Tinie Tempah’s healthy soul food concept Raps, Hammersmith’s Base Face Pizza (founded by Fulham fan and jazz bassist Tim Thornton), Goila Butter Chicken and Fat Pickle, a burger restaurant led by Jamie Oliver’s Fifteen graduate Big Has.
