Anthony Demetre is the latest name to throw his hat into the ring at the new Coal Drops Yard development, in King’s Cross.
The Wild Honey chef will open Vermuteria Café & Bar at the site in October this year, joining the likes of Pip Lacey’s Hicce and The Drop – a wine bar from the Hart brothers.
So says an announcement from the restaurant, Vermuteria has been prompted by Demetre’s interest in vermouth and the classic bodegas and vermuterias in northern Spain and Italy. The drinks list will be “extensive”. Vermouth-based cocktails will get a special showing.
Food? There’ll be an all-day menu including salads, charcuterie and pastries.

The dining space, seating 45 (40 more outside), will be casual, and chock-full of “old drinking memorabilia”. If that sounds formulaic, we have higher hopes given Demetre’s past record, not least at Wild Honey which, as as per our current review, is viewed by reporters as “restrained”, “intelligent and accomplished”.
“I love a traditional, proper negroni – and vermouth is my tipple of choice,” said Demetre.
“I have been experimenting with infusing vermouths with botanicals to enhance the flavour options, and Vermuteria will feature at least 40 different vermouths.”
