A ‘beak-to-tail’ restaurant offering 17 different cuts of chicken cooked on skewers over a custom-made hibachi grill opened this week on the edge of the City in Holborn.

Hotori, in New Fetter Lane, is a yakitori specialist – a popular style of eating in Japan – although unlike most in its country of origin it also serves a selection of wagyu beef, fish and seafood dishes.

The chefs use free-range slow-reared Fosse Meadows chickens, with yakitori sets starting at £22 a head. The full ‘beak-to-tail’ blow-out has to be booked 48 hours in advance, costs £110, and includes cartilage, neck, gizzard and even ‘knees soft bone’.

To wash it down, there’s a choice of Japanese beers, whiskies and sakes alongside an interesting, mostly European wine list.
