Silva, a new ‘day-to-night’ restaurant, opened yesterday in a Mayfair mews from first-time restaurateur Daria Grebenyuk. She recruited experienced hands led by head chef Slawomir Sawicki (ex-of Eric Chavot, Galvin at La Chapelle, Arts Club) and former Sir Terence Conran partner Peter Prescott to bring the project to fruition.
Silva – from the Latin word for forest – occupies a two-storey venue in Bruton Place, with highly styled interiors by Atelier Wren that are designed to shift from bright and airy during the day to cosy and intimate as the night draws in.
The menu is said to be shaped by the seasons and inspired by the founder’s travels from the Mediterranean as far as Japan. The day kicks off with coconut porridge, French toast and various egg dishes including a crab and Gruyère omelette, while the all-day menu has a strong selection of raw dishes, including potato waffle topped with steak tartare and winter truffle, salmon with crunchy rice, avocado and ponzu, a wild sea bass crudo or a chu-toro and mango tartare with mizuna.
More substantial evening dishes include Creedy Carver duck with coco beans and an orange jus as well as wild seabass all’acqua pazza with courgettes and green olives, inspired by Ristorante Pesce Baracca in Forte dei Marmi on the Tuscan coast, and a sharing Chateaubriand with pica pau sauce and wild mushrooms. Desserts range from a creamy Basque cheesecake to rum-roasted pineapple with coconut.
The wine list, with input from consultant Yulia Gurevich, offers more than 30 options by the glass, and ranges from West Sussex via the classic European regions to Australia, encompassing low-intervention wines, emerging producers and established names. There’s also a “brokers'” list of rare and fine wines.
