Another pop-up goes permanent as former supper club collaboration Flat Three opens a restaurant in Holland Park. Although serving up ‘Japanese-inspired’ food we’re told the dishes have been influenced by flavours from Korea and Scandinavia too. There will be a soft-launch period from 2 April (with a complimentary 500ml carafe of wine per couple per table).
A joint venture between Juliana Kim Moustakas and head chef Pavel Kanja, the original Flat Three was the test kitchen of Juliana’s home, where dishes were developed and trialled in a run of supper clubs.
The 40-cover restaurant will have à la carte and multi-course chef’s choice menus, served alongside small producer wines, sakes, house-made cocktails and house-pressed juices.
Kanja, who previously worked with London’s Japanese izakaya poster-boy Scott Hallsworth at WABI, will serve “Bräckt” a dish of turbot and trout and a dessert inspired by fermentation with toasted rice, sencha ice cream, ama koji porridge, cherry beer sorbet and buckwheat.
