It’s not like we needed convincing that glitzy Italian chain San Carlo is a flash operation, but they’ve gone and done it anyway, spanking £60k on the world’s most extravagant fungus for Truffle Week. Executive consultant chef for the restaurant group, Aldo Zilli, took delivery of this most indulgent ingredient yesterday (22 October) from Truffle Paradise – the most expensive order of truffles in the UK.
Prices for the rare mushrooms are particularly high this year due to the hot summer in the Italian truffle capital of Alba, which has made them harder to find. The San Carlo Restaurant Group, which has restaurants throughout the UK, will be serving a selection of truffle dishes from now until it runs out, as well as truffle beer and truffle grappa for die-hard fans of the fungus! On the menu: Pumpkin parmesan and white truffle risotto, Fettuccine with butter and white truffle, Cheese ravioli with truffle cream, Chicken stuffed with wild mushrooms and prosciutto topped with white truffle.
