Nieves Barragán Mohacho and José Etura, who met working at Barrafina, have announced their new venture Sabor will open on 1 February. The Spanish restaurant with additional bar and asador (wood-fired oven) arrives in Heddon Street, Mayfair, next month. Sabor will stagger its opening dates with the restaurant and bar launching at lunchtime on Thursday 1 February, while the asador will open later in the month, on a date to be announced soon. The restaurant and bar will not be taking reservations.
The ground-floor will feature a fresh seafood counter and an open kitchen producing regional dishes from across Spain, while the upstairs restaurant will focus on the cuisine of Galicia and Castile.
An in-house fishmonger prepares and serves fresh seafood, ordered by weight from a seafood counter alongside the kitchen. The seafood on offer will change daily, depending on what fish is available that day. On the menu: Diver caught scallop and five jotas ham consome, wild rabbit empanadilla, and Jerusalem artichoke and jamon tortilla with sage alioli.
At the bar dishes include: Cured presa iberica, crisp fried chicken oyster bocadillo, caqmarones fritos with fried quail egg, and black trumpet croquetas with black truffle. The drinks list will focus on a selection of vermouth and Spanish gins, as well as sherries, txakolis, Spanish wines and beers.
Upstairs large sharing tables overlook the open kitchen, with the asador oven the focal point of the room. The asador menu focuses on specialities from the Galicia and Castile regions of Spain. Dishes include: pulpo a feira, suckling pig, empanada gallega (pork and pepper pie). There will also be daily changing dishes, including a daily whole fish on the bone.
