Former Galvin at Windows head chef Joo Won is to open his first restaurant, Cálong, in Stoke Newington, combining classical French techniques, seasonal British produce and his Korean culinary heritage.
Cálong is taking over the premises in Church Street occupied for nine years by Rubedo, a European bistro and natural wine bar that signs off tomorrow (Saturday 26 October) with a closing-down party .
Originally from Busan, South Korea’s second city, Joo spent 15 years at Windows, in Mayfair’s Park Lane Hilton, where he rose to the position of head chef. He quit to launch his own more casual project – ‘Cálong’ is apparently a Korean term for ‘hipster’, so it should be a good fit for its first permanent address in east London.
Joo has already road-tested Cálong at pop-ups, including a guest-chef residency at Carousel three years ago. His repertoire of dishes include his signature JFC chicken; bread and doenjang butter; kimchi risotto with egg and cheddar; soy preserved artichokes with melon and ricotta; vegetable & tofu mandu in mushroom broth; stir-fried spicy pork belly with squid and perilla; and chocolate cremeux with hoji tea & toasted grain cream.
