Chef Luke French and wife and business partner Stacey Sherwood have revealed plans to open in May a Tokyo izakaya-inspired restaurant in Liverpool.
Nama (which means ‘raw’ in Japanese) will be a drinking and dining concept in Liverpool’s MetQuarter, using sashimi grade fish and “responsibly sourced ingredients” from the UK, the EU, and Japan.
The changing menu will include a variety of sashimi and nigiri, such as Cornish seabass with truffle, yuzu and soy; temaki (open hand rolls) with Sicilian red prawn, katsuo furikake and soy; tartares featuring wagyu smoked à la minute with caviar, wasabi and ponzu; and accompanying dishes such as seaweed Caesar salad.
The cocktail list will feature shiso and mandarin soda or yuzu negroni, as well as classic sake.
French and Sherwood also own Jöro restaurant in Sheffield and nearby street food concept Konjö.
