A new restaurant opens in North Yorkshire next month inspired by both Sir Winston Churchill and the great French chef Auguste Escoffier. Chartwell will launch on 8 May following a £3 million investment at Aldwark Manor Estate, a luxury hotel and golf resort 15 miles from York.
Former Fat Duck, Midsummer House and Gravetye Manor chef Chris O’Callaghan heads the kitchen at the 24-cover restaurant, promising a menu of locally sourced seasonal ingredients given a contemporary twist – plus “a touch of Savoy elegance” inspired by Escoffier, the leading chef in London and Paris at the turn of the 20th century.
Named after Churchill’s country house in Kent, Chartwell trades heavily on the wartime leader’s “love of the finer things in life”. His favourite Champagne, Pol Roger (he only bought vintage), is referenced in the names of the two tasting menus. The wine tasting room is called Clem after his wife Clementine, while the private dining room is named Pinafore after the room at the Savoy where Churchill founded a political dining club.
Estate director Christophe Gitton says: “Chartwell encapsulates the essence of Sir Winston Churchill’s remarkable legacy, offering a dining experience that is both timeless and unforgettable. Not only is the setting stunning and opulent, but the dishes created by our exceptional team of chefs will undoubtedly make us a top destination for food lovers.“
As for its own role during the Second World War, Aldwark Estate was requisitioned by the Home Office and used as accommodation for the Canadian Air Force.
Chartwell will offer 7 and 10-course tasting menus at £95 and £130 a head. Dishes at launch will include Aged Yorkshire Beef, Caviar, Smoked Eel, Celeriac; Barbequed Scallop, Cauliflower, Grape, Bisque; Roast Yorkshire Leek, Truffle, Artichoke, Grape; Parmesan Kuzu Dumplings, Broad Bean, Tomato Dashi; and Passion Fruit Curd, Mango, Marigold’.
