Alain Roux, chef-patron of Bray’s “glorious” Waterside Inn, and his father, the legendary chef and restaurateur Michel Roux, are set to launch a new restaurant in Edinburgh at The Balmoral during May.
Alain will take up the position of signature chef at the brasserie and bar, which replaces Hadrian’s Brasserie and The Balmoral Bar. He currently retains three Michelin stars at The Waterside Inn, the only restaurant in the world outside France to have upheld this accolade for more than thirty years. The Thames-side restaurant-with-rooms is “unsurpassable on a warm evening in summer”, according to our reporters. The £3 million renovation at The Balmoral – part of the Rocco Forte hotel family – has been underway since January and the new lifestyle space, which will cater for 210 covers across the restaurant and bar, will offer classic French dishes inspired by the finest Scottish ingredients.
The brasserie completes a five year refurbishment plan which includes the renovation of the hotel’s Castle and Old Town view rooms; Michelin-starred Number One restaurant; Afternoon Tea lounge Palm Court and destination whisky bar, SCOTCH.
Alain says the seasonally changing menu will be “rooted in French bistro dishes, in the classic modern style, irresistibly simple, delicious food”. Dishes will include Scottish seafood platters and sharing plates at the bar. The types of dishes Alain “loves to cook home and seek out with family and friends when we go out to eat”.
