Former Whatley Manor chef Martin Burge has joined the Farncombe Estate at Broadway in the Cotswolds, where he will preside over five restaurants in three hotels.
Bristol-born Burge put Whatley Manor in Wiltshire on the culinary map during a multi-starred 14-year reign which ended with his departure last November. The Harden’s Survey praised his cooking there as “fabulous”.
The Farncombe Estate, on a hill overlooking Broadway, comprises Dormy House hotel, a former country farmhouse; the much smaller Foxhill Manor boutique hotel; and The Fish Hotel, a collection of individual houses and huts. The “fine dining” restaurant in Dormy House is called the Garden Room, in reference to the nearby Vale of Evesham, otherwise known as “the garden of England”.
