A sustainable Japanese restaurant using seasonal Sussex ingredients called Fumi has opened in Brighton, from the team behind Wolfox roastery and cafés. The team also opened plant-based Japanese restaurant Kusaki nearby in 2021.
Founder Fabio Lauro said: “At Fumi we want to bring everything that is good about the beautiful countryside of Sussex together with hand-crafted Japanese food, including well-known small plates like sushi, sashimi and tempura combined with exotic, lesser-known chef’s speciality main dishes, changing daily and using superb seasonal produce.
“But our main ingredient is sustainability and we have tried to build this into everything we do, from the décor to our ingredients sourcing and making all the food and drink we serve in-house, down to our sauces, pickles and wasabi.”
Fumi, in Circus Steet, serves coffee and breakfast in the morning, followed by bento boxes at lunchtime and a full evening dinner menu.
