Jonny Lake and Isa Bal (left and right in photo) have launched a Monday-only wine bar called Labombe in the bar of their highly rated Bermondsey venue Trivet.
Guests can order from a 450-bottle wine list described as “fantastic and eclectic” in the 2024 Harden’s guide, with sommelier Isa choosing a selection of bottles to serve by the glass each week.
There is also a weekly blackboard selection of Jonny’s small and large plates, including such dishes as hot tongue buns, Cornish plaice sauce ‘Jean Vignard’ and costoletta alla Milanese.
The new project rights an old wrong for Jonny, former head chef at the Fat Duck. On a recent visit to his parents’ home in Ontario he came across an school French project from 35 years ago in which he invented a fantasy restaurant, Labombe – but forgot to list the drinks. His teacher gave him a measly 6/10, with the comment “Où sont les boissons?“
Jonny and Isa opened Trivet in 2019 to widespread acclaim for Jonny’s “very accomplished” (Harden’s) cooking. It was awarded a second Michelin star this year.
